Šibenčanin Mario Kalauz dulje vrijeme živi u Oslu u Norveškoj i rado obilazi tamošnje ribarnice. Osim na peškariji u Oslu, bio je na popularnoj ribarnici u Bergenu. Za Otvoreno more poslao nam je dosta fotografija i napisao svoje dojmove.
Kaže kako je na jednoj peškariji u Oslu našao i kupio najvećeg ikada viđenog škampa. Ova mrcina od 45 dag imala je meso čvrste strukture, slatkasto, vrhunske kvalitete i svježine.

Za kilogram škampa plaća se 42 eura, ali treba povesti računa da su plaće u Norveškoj tri-četiri puta veće po zanimanjima. Tako je po životnom standardu prosječnom radniku povoljnije kilo škampa u Norveškoj nego u Hrvatskoj.
Koncept unutarnje, zatvorene peškarije u Bergenu funkcionira na sistemu štandova s vitrinama u kojima je svježa ponuda. Unutar njih je i kuhinja, tako da osim prodajnog postoji i ugostiteljski koncept s pripremom i posluživanjem.

Navedene cijene vrijede ako se ribu odnese kući, a kad je jedete u sklopu objekta, cijena je 30 posto veća. Tako je i u Oslu.
Vanjska peškarija u Bergenu udaljena je od zatvorene stotinjak metara i otvorena samo od travnja do rujna. Koncept se više temelji na pripremi i posluživanju jela na jednostavnim drvenim stolovima i bancima. Funkcionalnost i kvaliteta su ispred vizualnog doživljaja, pa ovdje dolaze do izražaja norveški i skandinavski stil života.

Kalauz napominje da suhi bakalar nije često na norveškim stolovima, nego je to više proizvod za izvoz unatrag 1000 godina. Vikinzi su ga još tada nosili na svoja putovanja i mijenjali za druga dobra i robe. Idealan je bio zbog jednostavnog i dugotrajno održivog skladištenja.
Norvežani ga najviše konzumiraju sirovog uz razne umake na bazi vrhnja i priloge poput krumpira, salata, te preljeve od maslaca s pancetom. Osim sirovog, najviše konzumiraju i soljeni sušeni. Često je na stolu uz slične umake i priloge. Soljeni sušeni bakalar veći je u volumenu i treba kraće namakanje u vodi.
– Okus sirovog bakalara je dosta blag, s laganom aromom sušenog ako uspoređujemo. Po strukturi mesa sličan je našemu molu – kaže Kalauz.
Cijena fileta divljeg svježeg bakalara u Oslu je oko 24 eura po kilogramu.

Neki od trgovačkih lanaca svaki tjedan nude sve svježe morske namirnice s 30 posto popusta, kako bi potaknuli konzumaciju morskih namirnica, a ujedno i pomogli vlastitoj privrednoj grani.
Po pitanju nabave jeftinog bakalara, Kalauz tvrdi da kineska stranica Alibaba nudi ovu ribu po cijeni od sedam eura po kilogramu ili niže. Riječ je o niskoj kvaliteti bakalara, ali je cijena vrlo zanimljiva preprodavačima.
Podrijetlo i starost bakalara više su nego upitni pri ovakvim ponudama, a često je u pitanju bakalar star više od šest-sedam godina, jer mu vrijednost pada kako je stariji. Šibenčanin za svoje potrebe bakalar naručuje od norveške tvrtke Frahavet AS, koja cijene ističe na svojim web stranicama. Za pakiranje od dva kilograma bakalara plaća se otprilike 84 eura.

Kalauz nam je kazao i nekoliko riječi o pripremi ove cijenjene namirnice, kao i kvaliteti na hrvatskom tržištu.
– Za svaku godinu sušenja, u pripremi vrijedi pravilo 48 sati namakanja u vodi, uz bar dvije izmjene vode kroz 24 sata. Bakalar koji često možemo naći na našem tržištu stariji je od dvije godine, a trgovci formiraju cijenu od nekih 200 kuna po kilogramu da bude prihvatljiva našim ljudima. Nažalost, bez upute o namakanju i informacije o starosti poslije sušenja, samo s datumom pakiranja – navodi Kalauz.

Vanjska peškarija u Bergenu udaljena je od zatvorene stotinjak metara i otvorena samo od travnja do rujna. Koncept se više temelji na pripremi i posluživanju jela na jednostavnim drvenim stolovima i bancima. Funkcionalnost i kvaliteta su ispred vizualnog doživljaja, pa ovdje dolaze do izražaja norveški i skandinavski stil života.

Kalauz napominje da suhi bakalar nije često na norveškim stolovima, nego je to više proizvod za izvoz unatrag 1000 godina. Vikinzi su ga još tada nosili na svoja putovanja i mijenjali za druga dobra i robe. Idealan je bio zbog jednostavnog i dugotrajno održivog skladištenja.
Norvežani ga najviše konzumiraju sirovog uz razne umake na bazi vrhnja i priloge poput krumpira, salata, te preljeve od maslaca s pancetom. Osim sirovog, najviše konzumiraju i soljeni sušeni. Često je na stolu uz slične umake i priloge. Soljeni sušeni bakalar veći je u volumenu i treba kraće namakanje u vodi.
– Okus sirovog bakalara je dosta blag, s laganom aromom sušenog ako uspoređujemo. Po strukturi mesa sličan je našemu molu – kaže Kalauz.
Cijena fileta divljeg svježeg bakalara u Oslu je oko 24 eura po kilogramu.

Neki od trgovačkih lanaca svaki tjedan nude sve svježe morske namirnice s 30 posto popusta, kako bi potaknuli konzumaciju morskih namirnica, a ujedno i pomogli vlastitoj privrednoj grani.
Po pitanju nabave jeftinog bakalara, Kalauz tvrdi da kineska stranica Alibaba nudi ovu ribu po cijeni od sedam eura po kilogramu ili niže. Riječ je o niskoj kvaliteti bakalara, ali je cijena vrlo zanimljiva preprodavačima.
Podrijetlo i starost bakalara više su nego upitni pri ovakvim ponudama, a često je u pitanju bakalar star više od šest-sedam godina, jer mu vrijednost pada kako je stariji. Šibenčanin za svoje potrebe bakalar naručuje od norveške tvrtke Frahavet AS, koja cijene ističe na svojim web stranicama. Za pakiranje od dva kilograma bakalara plaća se otprilike 84 eura.

Kalauz nam je kazao i nekoliko riječi o pripremi ove cijenjene namirnice, kao i kvaliteti na hrvatskom tržištu.
– Za svaku godinu sušenja, u pripremi vrijedi pravilo 48 sati namakanja u vodi, uz bar dvije izmjene vode kroz 24 sata. Bakalar koji često možemo naći na našem tržištu stariji je od dvije godine, a trgovci formiraju cijenu od nekih 200 kuna po kilogramu da bude prihvatljiva našim ljudima. Nažalost, bez upute o namakanju i informacije o starosti poslije sušenja, samo s datumom pakiranja – navodi Kalauz.
