Polpete, ćufte, mesne okruglice i ostale varijacije na temu sjajan su način za pripremu ukusnog jela za cijelu obitelju od relativno malo mesa. Bilo da mu se pridruži stari kruh ili prezla, kako bi se dobilo na količini, zahvaljujući začinima i načinu pripreme nitko na kraju neće imati dojam da se prilikom pripreme na ičemu štedjelo.

Svoj adut u ovoj igri imaju i Šveđani, čije su mesne okruglice, köttbullar, popularne širom svijeta. Za razliku od naših ćufti i polpeta u šugu od rajčice, ove su manje i završavaju se u finom mesnom umaku. Savršen recept za köttbullar dala nam je Tanja Pastuović Klaić koju pratimo na @tanja.cookamigustam. Tanja je izvornom receptu dala svoj majstorski touch pa njen umak sadrži i dodatak za još bogatiji okus - sušene vrganje.

Tanja nam još poručuje kako se uz ovakav tip okruglica tradicionalno poslužuje i nezaobilazan džem od brusnica, dok se kao prilog obično nudi pire od krumpira. Tanjin je prijedlog da pire izostavimo u korist zdravije opcije: brokule i graška.

Švedske mesne okruglice - köttbullar

Sastojci:

500 g mljevenog mesa (pola junetine, pola svinjetine)
1 manja glavica luka
1 jaje
1 žličica nasjeckanog kopra
1 žličica nasjeckanog peršinovog lista
100 g krušnih mrvica
120-150 ml mlijeka
sol, papar, muškatni oraščić
ulje, maslac
1-2 žlice oštrog brašna
sušeni vrganji
oko 500 ml mesnog temeljca
Dijon senf
džem od brusnica
kuhana brokula i grašak

Priprema:

U zdjeli pomiješajte mljevenu junetinu i mljevenu svinjetinu, dodajte sitno narezani luk, jaje, peršin, kopar, krušne mrvice, mlijeko, muškatni oraščić (svježe bariban), sol i papar pa sve dobro promiješajte da se sastojci sjedine.

Od ove smjese oblikujte okruglice veličine oraha.

Zagrijte ulje i maslac pa pržite okruglice do zalatnosmeđe boje. Izvadite okruglice na tanjur a u tavu dodajte žlicu, dvije brašna, po potrebi još malo maslaca i vrlo kratko pržite jer brašno treba ostati svijetlo. Ulijte mesni temeljac, dodajte u vreloj vodi ranije natopljene sušene vrganje (skupa s vodom) i brzo promiješajte. U tavu s umakom dodajte malo senfa, promiješajte pa dodajte mesne okruglice i kuhajte, uz povremeno miješanje, još 20-ak minuta.

Poslužite s džemom od brusnica i kuhanom brokulom i graškom.

Polpete, ćufte, mesne okruglice i ostale varijacije na temu sjajan su način za pripremu ukusnog jela za cijelu obitelju od relativno malo mesa. Bilo da mu se pridruži stari kruh ili prezla, kako bi se dobilo na količini, zahvaljujući začinima i načinu pripreme nitko na kraju neće imati dojam da se prilikom pripreme na ičemu štedjelo.

Svoj adut u ovoj igri imaju i Šveđani, čije su mesne okruglice, köttbullar, popularne širom svijeta. Za razliku od naših ćufti i polpeta u šugu od rajčice, ove su manje i završavaju se u finom mesnom umaku. Savršen recept za köttbullar dala nam je Tanja Pastuović Klaić koju pratimo na @tanja.cookamigustam. Tanja je izvornom receptu dala svoj majstorski touch pa njen umak sadrži i dodatak za još bogatiji okus - sušene vrganje.

Tanja nam još poručuje kako se uz ovakav tip okruglica tradicionalno poslužuje i nezaobilazan džem od brusnica, dok se kao prilog obično nudi pire od krumpira. Tanjin je prijedlog da pire izostavimo u korist zdravije opcije: brokule i graška.

Švedske mesne okruglice - köttbullar

Sastojci:

500 g mljevenog mesa (pola junetine, pola svinjetine)
1 manja glavica luka
1 jaje
1 žličica nasjeckanog kopra
1 žličica nasjeckanog peršinovog lista
100 g krušnih mrvica
120-150 ml mlijeka
sol, papar, muškatni oraščić
ulje, maslac
1-2 žlice oštrog brašna
sušeni vrganji
oko 500 ml mesnog temeljca
Dijon senf
džem od brusnica
kuhana brokula i grašak

Priprema:

U zdjeli pomiješajte mljevenu junetinu i mljevenu svinjetinu, dodajte sitno narezani luk, jaje, peršin, kopar, krušne mrvice, mlijeko, muškatni oraščić (svježe bariban), sol i papar pa sve dobro promiješajte da se sastojci sjedine.

Od ove smjese oblikujte okruglice veličine oraha.

Zagrijte ulje i maslac pa pržite okruglice do zalatnosmeđe boje. Izvadite okruglice na tanjur a u tavu dodajte žlicu, dvije brašna, po potrebi još malo maslaca i vrlo kratko pržite jer brašno treba ostati svijetlo. Ulijte mesni temeljac, dodajte u vreloj vodi ranije natopljene sušene vrganje (skupa s vodom) i brzo promiješajte. U tavu s umakom dodajte malo senfa, promiješajte pa dodajte mesne okruglice i kuhajte, uz povremeno miješanje, još 20-ak minuta.

Poslužite s džemom od brusnica i kuhanom brokulom i graškom.

Polpete, ćufte, mesne okruglice i ostale varijacije na temu sjajan su način za pripremu ukusnog jela za cijelu obitelju od relativno malo mesa. Bilo da mu se pridruži stari kruh ili prezla, kako bi se dobilo na količini, zahvaljujući začinima i načinu pripreme nitko na kraju neće imati dojam da se prilikom pripreme na ičemu štedjelo.

Svoj adut u ovoj igri imaju i Šveđani, čije su mesne okruglice, köttbullar, popularne širom svijeta. Za razliku od naših ćufti i polpeta u šugu od rajčice, ove su manje i završavaju se u finom mesnom umaku. Savršen recept za köttbullar dala nam je Tanja Pastuović Klaić koju pratimo na @tanja.cookamigustam. Tanja je izvornom receptu dala svoj majstorski touch pa njen umak sadrži i dodatak za još bogatiji okus - sušene vrganje.
