Mesne okruglice, polpete, ćuftice... sve ih jako volimo i odmah nas vrate u djetinjstvo. Međutim, ponekad nam obožavane okruglice zadaju puno muka jer se uporno - raspadaju. Kako tome doskočiti? Načina je nekoliko pa odaberite one po svom guštu.

1. Masirajte meso - zvuči pomalo apsurdno, ali nije. Stavite ruke u zdjelu s mesom i ostalim sastojcima i dobro sve izmiješajte prstima. Toplina vaših ruku pomoći će proteinima da se opuste pa će se meso bolje pomiješati sa sastojcima i tijekom pečenja sve držati na okupu. Dovoljno je samo nekoliko minuta, a smjesa će postati pomalo ljepljiva kada bude spremna.

2. Dodajte mrvice - krušne, po mogućnosti, no neki vole dodati i sitne zobene pahuljice i slične zamjenske, zdravije alternative prezli. U svakom slučaju, učinak je isti: mrvice upijaju sokove iz mesa i tako čuvaju okruglice da ne postanu previše suhe. Samo nemojte pretjerati s količinom kako smjesu ne bi učinile previše rastresitom - e tek će onda biti raspadanja pri pečenju... Mnogi spominju da je savršen omjer 3 žlice na kilogram mesa.

3. Dodajte jaje - i to lagano umućeno, jer djeluje kao vezivo za sastojke. Potrebna vam je samo mala količina, jedno manje jaje će biti dovoljno za pola kilograma mljevenog mesa. Neki tvrde da su jaja kriva za žilave okruglice, ako je to i vaše iskustvo, alternativa je kruh namočen u mlijeku i potom istisnut.

4. Nemojte previše štedjeti - svi smo skloni mesu, radi uštede, dodati druge sastojke. Međutim, tu treba biti oprezan. Začinsko bilje i začini su u redu, ali kad jednom počnete dodavati hrpu nasjeckanog povrća, stvarat će vam poteškoće kod termičke obrade: gorjet će, lijepit će se za stijenke posude, a može doprinijeti i tome da se okruglice počnu raspadati.

5. Brašno na kraju - umjesto šećera na kraju, kad je riječ o mesnim okruglicama odabiremo brašno. Zašto? Zato što okruglice prije prženja treba uvaljati u bgrašno, koje će u dodiru s masnoćom formirati koricu koja će zaštititi polpetice od raspadanja.

Mesne okruglice, polpete, ćuftice... sve ih jako volimo i odmah nas vrate u djetinjstvo. Međutim, ponekad nam obožavane okruglice zadaju puno muka jer se uporno - raspadaju. Kako tome doskočiti? Načina je nekoliko pa odaberite one po svom guštu.

1. Masirajte meso - zvuči pomalo apsurdno, ali nije. Stavite ruke u zdjelu s mesom i ostalim sastojcima i dobro sve izmiješajte prstima. Toplina vaših ruku pomoći će proteinima da se opuste pa će se meso bolje pomiješati sa sastojcima i tijekom pečenja sve držati na okupu. Dovoljno je samo nekoliko minuta, a smjesa će postati pomalo ljepljiva kada bude spremna.

2. Dodajte mrvice - krušne, po mogućnosti, no neki vole dodati i sitne zobene pahuljice i slične zamjenske, zdravije alternative prezli. U svakom slučaju, učinak je isti: mrvice upijaju sokove iz mesa i tako čuvaju okruglice da ne postanu previše suhe. Samo nemojte pretjerati s količinom kako smjesu ne bi učinile previše rastresitom - e tek će onda biti raspadanja pri pečenju... Mnogi spominju da je savršen omjer 3 žlice na kilogram mesa.

3. Dodajte jaje - i to lagano umućeno, jer djeluje kao vezivo za sastojke. Potrebna vam je samo mala količina, jedno manje jaje će biti dovoljno za pola kilograma mljevenog mesa. Neki tvrde da su jaja kriva za žilave okruglice, ako je to i vaše iskustvo, alternativa je kruh namočen u mlijeku i potom istisnut.

4. Nemojte previše štedjeti - svi smo skloni mesu, radi uštede, dodati druge sastojke. Međutim, tu treba biti oprezan. Začinsko bilje i začini su u redu, ali kad jednom počnete dodavati hrpu nasjeckanog povrća, stvarat će vam poteškoće kod termičke obrade: gorjet će, lijepit će se za stijenke posude, a može doprinijeti i tome da se okruglice počnu raspadati.

5. Brašno na kraju - umjesto šećera na kraju, kad je riječ o mesnim okruglicama odabiremo brašno. Zašto? Zato što okruglice prije prženja treba uvaljati u bgrašno, koje će u dodiru s masnoćom formirati koricu koja će zaštititi polpetice od raspadanja.

Mesne okruglice, polpete, ćuftice... sve ih jako volimo i odmah nas vrate u djetinjstvo. Međutim, ponekad nam obožavane okruglice zadaju puno muka jer se uporno - raspadaju. Kako tome doskočiti? Načina je nekoliko pa odaberite one po svom guštu.

1. Masirajte meso - zvuči pomalo apsurdno, ali nije. Stavite ruke u zdjelu s mesom i ostalim sastojcima i dobro sve izmiješajte prstima. Toplina vaših ruku pomoći će proteinima da se opuste pa će se meso bolje pomiješati sa sastojcima i tijekom pečenja sve držati na okupu. Dovoljno je samo nekoliko minuta, a smjesa će postati pomalo ljepljiva kada bude spremna.

2. Dodajte mrvice - krušne, po mogućnosti, no neki vole dodati i sitne zobene pahuljice i slične zamjenske, zdravije alternative prezli. U svakom slučaju, učinak je isti: mrvice upijaju sokove iz mesa i tako čuvaju okruglice da ne postanu previše suhe. Samo nemojte pretjerati s količinom kako smjesu ne bi učinile previše rastresitom - e tek će onda biti raspadanja pri pečenju... Mnogi spominju da je savršen omjer 3 žlice na kilogram mesa.

3. Dodajte jaje - i to lagano umućeno, jer djeluje kao vezivo za sastojke. Potrebna vam je samo mala količina, jedno manje jaje će biti dovoljno za pola kilograma mljevenog mesa. Neki tvrde da su jaja kriva za žilave okruglice, ako je to i vaše iskustvo, alternativa je kruh namočen u mlijeku i potom istisnut.

4. Nemojte previše štedjeti - svi smo skloni mesu, radi uštede, dodati druge sastojke. Međutim, tu treba biti oprezan. Začinsko bilje i začini su u redu, ali kad jednom počnete dodavati hrpu nasjeckanog povrća, stvarat će vam poteškoće kod termičke obrade: gorjet će, lijepit će se za stijenke posude, a može doprinijeti i tome da se okruglice počnu raspadati.

5. Brašno na kraju - umjesto šećera na kraju, kad je riječ o mesnim okruglicama odabiremo brašno. Zašto? Zato što okruglice prije prženja treba uvaljati u bgrašno, koje će u dodiru s masnoćom formirati koricu koja će zaštititi polpetice od raspadanja.
