Ljutika ili, kako joj je službeni naziv, luk kozjak (lat. Allium ascalonicum) vrsta je koja potječe s područja Bliskog istoka, a u našim je područjima u uzgoju već dugi niz godina, uglavnom u priobalju i na otocima. U prošlosti se uzgajala puno više nego danas, iako je zadnjih godina opet primjetan pojačani uzgoj.
Ova iznimna vrsta prilagodljiva je mnogim vrstama tla, ali ipak preferira neutralna do blago alkalna, kakva su upravo ona u našem obalnom dijelu. Uzgaja se na potpuno osunčanim položajima, a bez problema će podnijeti kratkotrajna razdoblja s temperaturama ispod nule.
Važno je prije sadnje tlo obraditi do dubine od oko 25-30 centimetara. Zajedno s primarnom obradom tla obavlja se i gnojidba kompleksnim mineralnim gnojivima (NPK) formulacije 10:20:30, dok se poslije prihranjuje formulacijom 15:15:15.
Ono što treba izbjegavati jest sadnja u tlo kojem je u toj godini dodan stajski gnoj, pa je kod izbora mjesta sadnje najbolje izabrati ono koje je bilo gnojeno u prethodnoj godini.

Na ovako pripremljenoj gredici ljutika se sadi u kolovozu, iako je sadnja moguća i u ostatku godine. Najjednostavniji i najčešći uzgoj, pogotovo na malim površinama, jest uzgojem iz lučica koje su sačuvane od prethodne godine.
Lučice se sade na razmak od 10-ak centimetara jedna od druge, i to tako da vrh lučice viri iz tla. Odmah nakon sadnje nasad se dobro zalije.
Tijekom razdoblja rasta agrotehničke mjere se svode na redovito plijevljenje, s obzirom da ljutici za nesmetan rast i razvoj smetaju korovi, dok se zalijeva jedino za dugotrajnog sušnog razdoblja, kao i nakon prihrane.
Sama se razmnožava, pa na istome mjestu može ostati dulji niz godina, ali je ipak preporučljivo svakih nekoliko godina biljku izvaditi iz tla i presaditi na novo mjesto.

Ljutiku karakteriziraju dugi zeleni, cjevasti listovi, viši i tanji nego kod luka (kapule), koji se pripremaju na razne načine, najčešće u zelenim salatama ili kratko prženi s jajima.
Podzemni dio – lučice, konzumiraju se u raznim jelima, a ljutika je posebno cijenjena i kao "kiseliš" pripremljen u vinskom octu – kvasini, kao zimnica. Okus ljutike je blaži nego što je okus kapule.
Ako i nemate vrta, ljutiku možete uzgojiti i na balkonu u dovoljno velikoj posudi u mješavini komposta i vrtnog tla. Kod uzgoja u posudi, ipak će trebati nešto češće zalijevanje.

Nakon vađenja ljutike iz tla, odstranite sve ostatke tla, a lučice ostavite da se prosuše na zraku. Uklonite veći dio vanjske kore, ipak ostavljajući jedan njezin sloj, toliki da se kroz njega nazire žućkasto "meso" lučice. Ovako pripremljenu ljutiku ugusto složite u staklenki i prelijte vinskom kvasinom. Ostavite na polusjenovitom položaju.
Nakon otprilike mjesec dana lučice su spremne za konzumaciju. Kvasinu u kojoj su se kiselile, procijedite kroz fino sito ili gazu. Dobivenu odličnu aromatiziranu kvasinu možete koristiti za salate, pogotovo one od kupusa.

Ljutika ili, kako joj je službeni naziv, luk kozjak (lat. Allium ascalonicum) vrsta je koja potječe s područja Bliskog istoka, a u našim je područjima u uzgoju već dugi niz godina, uglavnom u priobalju i na otocima. U prošlosti se uzgajala puno više nego danas, iako je zadnjih godina opet primjetan pojačani uzgoj.
Ova iznimna vrsta prilagodljiva je mnogim vrstama tla, ali ipak preferira neutralna do blago alkalna, kakva su upravo ona u našem obalnom dijelu. Uzgaja se na potpuno osunčanim položajima, a bez problema će podnijeti kratkotrajna razdoblja s temperaturama ispod nule.
Važno je prije sadnje tlo obraditi do dubine od oko 25-30 centimetara. Zajedno s primarnom obradom tla obavlja se i gnojidba kompleksnim mineralnim gnojivima (NPK) formulacije 10:20:30, dok se poslije prihranjuje formulacijom 15:15:15.
Ono što treba izbjegavati jest sadnja u tlo kojem je u toj godini dodan stajski gnoj, pa je kod izbora mjesta sadnje najbolje izabrati ono koje je bilo gnojeno u prethodnoj godini.

Na ovako pripremljenoj gredici ljutika se sadi u kolovozu, iako je sadnja moguća i u ostatku godine. Najjednostavniji i najčešći uzgoj, pogotovo na malim površinama, jest uzgojem iz lučica koje su sačuvane od prethodne godine.
Lučice se sade na razmak od 10-ak centimetara jedna od druge, i to tako da vrh lučice viri iz tla. Odmah nakon sadnje nasad se dobro zalije.
Tijekom razdoblja rasta agrotehničke mjere se svode na redovito plijevljenje, s obzirom da ljutici za nesmetan rast i razvoj smetaju korovi, dok se zalijeva jedino za dugotrajnog sušnog razdoblja, kao i nakon prihrane.
Sama se razmnožava, pa na istome mjestu može ostati dulji niz godina, ali je ipak preporučljivo svakih nekoliko godina biljku izvaditi iz tla i presaditi na novo mjesto.

Ljutiku karakteriziraju dugi zeleni, cjevasti listovi, viši i tanji nego kod luka (kapule), koji se pripremaju na razne načine, najčešće u zelenim salatama ili kratko prženi s jajima.
Podzemni dio – lučice, konzumiraju se u raznim jelima, a ljutika je posebno cijenjena i kao "kiseliš" pripremljen u vinskom octu – kvasini, kao zimnica. Okus ljutike je blaži nego što je okus kapule.
Ako i nemate vrta, ljutiku možete uzgojiti i na balkonu u dovoljno velikoj posudi u mješavini komposta i vrtnog tla. Kod uzgoja u posudi, ipak će trebati nešto češće zalijevanje.

Nakon vađenja ljutike iz tla, odstranite sve ostatke tla, a lučice ostavite da se prosuše na zraku. Uklonite veći dio vanjske kore, ipak ostavljajući jedan njezin sloj, toliki da se kroz njega nazire žućkasto "meso" lučice. Ovako pripremljenu ljutiku ugusto složite u staklenki i prelijte vinskom kvasinom. Ostavite na polusjenovitom položaju.
Nakon otprilike mjesec dana lučice su spremne za konzumaciju. Kvasinu u kojoj su se kiselile, procijedite kroz fino sito ili gazu. Dobivenu odličnu aromatiziranu kvasinu možete koristiti za salate, pogotovo one od kupusa.
